BIANCO MEDITERRANEO - IGT  Costa Toscana Vermentino 2017
 
Produced with grapes from the vineyards of the Pascoli Alti, Capoliveri, Isola d’Elba.
 
The vineyard, the highest in the farm, is located at the top of Mount Calamita, at an altitude of 300 meters.
The soil, poor and with a large skeleton, is formed by metamorphic granites, rich in iron minerals.
 
Grape variety: Vermentino 90%, Fiano 10%.
Yield per hectare: 60 hectoliters
Alcohol content: 13%
 
Vinification and aging: the manual harvest is followed by soft pressing. After racking, the fermentation takes place at 18 ° -20 ° C.The wine remains in contact with the fine lees for a few months. Bottling in late spring and long aging in the bottle.
 
Pairings: balanced and fresh, with great character and surprising minerality.
Sapid aftertaste with a hint of Mediterranean scrub.
In addition to the classic pairings with seafood and rustic cuisine, it finds in fish starters an ideal combination and goes well with cheeses that are not too seasoned
